Ambit Cooks: Raspberry Pinot Noir Wine Popsicles

Here’s a childhood throwback with an adult twist to celebrate National Wine Day. Ambit Cooks shows you how to make our delicious and refreshing Raspberry Pinot Noir Wine Popsicles. Enjoy responsibly!

  • 1 cup Pinot Noir wine
  • 1/3 cup water
  • 1/3 cup sugar
  • 12 oz fresh raspberries
  • Popsicle molds and sticks

  • Add sugar and water to a pot and bring it to a low boil while stirring to make your simple syrup.
  • Remove syrup from heat and let it cool completely.
  • Puree fresh raspberries in a food processor (you can also use a blender or mash with a fork).
  • Combine the cooled syrup, Pinot Noir and raspberry puree in a bowl with a pouring spout (a pitcher will also work).
  • Pour mixture into each mold leaving some room for expansion during the freeing process.
  • Insert popsicle sticks.
  • Freeze until solid (4 to 6 hours).
  • To remove popsicles after freezing, dip the molds into warm water for 15-30 seconds.
  • Remove the popsicles and enjoy!
  • If you’re not serving the popsicles immediately, package each in its own plastic bag and return them to the freezer.
